I’m making a 5‑ingredient watermelon and cucumber juice. Watermelon and cucumber are over 90% water, and I add coconut water for natural electrolytes, plus lime, mint, and a tiny pinch of salt to help your body hold onto fluids
Serves 2
INGREDIENTS:
600 g cubed seedless watermelon
150 g sliced cucumber (about 1 medium cucumber)
120 ml coconut water – or use extra watermelon if you prefer
Juice of 1 lime
6–8 fresh mint leaves (a small handful)
Ice cubes, to serve
METHOD:
Cut the watermelon into cubes and remove any large seeds if needed.
Roughly slice the cucumber.
Blend or juice
- Blender method: Add watermelon, cucumber, coconut water, juice, and mint to a blender. Blend until completely smooth.
- Juicer method: Feed watermelon, cucumber, lime (cut into wedges) and mint through your juicer, then stir in coconut water.
Serve over ice, garnished with extra cucumber slices, watermelon wedges, mint, and a lime wedge.
