Serves 6 

INGREDIENTS: 

Olive oil

400g fresh Italian sausage, sliced into 1-inch pieces

2 cloves of garlic, crushed

1 tsp dried chilli flakes

1 tsp dried oregano

1 tbsp tomato puree

1 x 400g tinned cherry tomatoes

1 tin of water

300g trofie pasta

sea salt and freshly ground black pepper

Parmesan cheese, freshly grated

Handful of fresh basil leaves, torn

 


METHOD:

  1. Place a shallow casserole dish or large saucepan over a medium heat and add 1 tbsp of olive oil. When the oil is hot, stir in the sliced fresh Italian sausage and cook for 6-7 minutes, stirring every minute or so, until the sausage is browned. 
  2. Turn the heat down to low and stir in the crushed garlic, chilli, dried oregano and tomato puree and cook for a minute. Next add the tomatoes, and water and season with sea salt and freshly ground black pepper. 
  3. Next stir in the pasta, coating it with the liquid. Cover and allow to cook for 10 minutes, stirring every few minutes to make sure nothing is sticking at the bottom of the pan. If the sauce is getting dry add in an extra few tablespoons of water. 
  4. Once the pasta is cooked, add in the fresh basil and serve in warmed bowls with gratings of fresh parmesan cheese.
