10 Minute Baked Eggs With Ham & Gruyere Cheese

Serves 2
INGREDIENTS:
25g butter
4 eggs
75g, cooked ham, shredded
50g Gruyere cheese, grated
1 tsp Dijon mustard
¼ tsp grated fresh nutmeg
½ tsp thyme leaves
2 tablespoons cream
Sea salt and freshly ground black pepper
To serve
Bread, toasted
METHOD:
1. Pre-heat the oven to 180°C/360°F/Gas Mark 4 (fan oven).
2. Grease two small ovenproof dishes with the butter. Whisk together the cream and mustard and pour half into each dish. Grate half the Gruyere cheese into the dishes and crack two eggs into each dish.
3. Divide two-thirds of the shredded ham between the two dishes and pour the remaining cream on top, followed by the remaining Gruyere cheese and ham. Season with sea salt and freshly ground black pepper.
4. Place the dishes on a baking tray and into the pre-heated oven for 10 minutes.
5. Serve with toasted bread cut into thin slices so that you can dip them into the eggs.
