Watermelon, Feta & Oregano Salad

Serves 4

15 minutes

INGREDIENTS:

400g (14oz) watermelon, chopped and seeds removed

450g (16oz) plum tomatoes, chopped

ó large cucumber, diced

1 spring onion, finely sliced

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

250g (8.8oz) feta cheese, crumbled

1 teaspoon dried oregano

sea salt and freshly ground black pepper

METHOD:

1. Put the watermelon, tomatoes, cucumber and springonion in a large serving bowl.

2. Pour over the oil and balsamic vinegar and season withsalt and pepper. Sprinkle over the oregano and mixwell. Crumble the feta over the salad and serve.
