Baked Eggs with Ham, Cream, Nutmeg & Thyme

Serves 2

INGREDIENTS:

25g butter

4 eggs

50g Gouda cheese, grated

75g, cooked ham, shredded

1 tsp Dijon mustard

½ tsp thyme leaves

¼ tsp grated fresh nutmeg

2 tablespoons cream

sea salt and freshly ground black pepper

METHOD:

1. Pre-heat the oven to 180oC/Gas Mark 4 (fan oven).

2. Grease 2 small ovenproof dishes with the butter and crack 2 eggs into each one.

3. Divide the shredded ham between the two dishes.

4. Place the cheese in a bowl and whisk together with the mustard, nutmeg, thyme and cream. Season with salt and pepper. Scoop the cheese mixture on top of the eggs.

5. Place the dishes on a baking tray and into the pre-heated oven for 10 minutes.

6. Serve with toasted bread cut into thin slices so that you can dip them into the eggs.
