The Mother's Day Croque Madame

Happy Mothers Day! Here is the perfect breakfast in bed recipe to deliver to your Mum today. She deserves it!

Serves 2 (Mum and 1 other)

INGREDIENTS:

2 Clarence Court Burford Brown Eggs

4 slices of sourdough white bread

2 tablespoon butter, softened

4 slices of cooked ham

1 tablespoon Dijon mustard

6 tablespoons grated Gruyère cheese

Sea salt and freshly ground black pepper

METHOD:

1. Butter the 4 slices of sourdough bread, followed by a smear of Dijon mustard. Place two slices of ham on two slices of the bread. Top with equal amounts of grated Gruyère cheese, then season with sea salt and freshly ground black pepper. Place the other buttered slices of bread on top, press to seal, then spread some more butter on the outside of the sandwich on both sides.

2. Place a frying pan over a low-medium heat and fry both sandwiches for 1-2 minutes on each side. Keep warm in the oven while you fry the eggs. Melt the remaining butter in the pan and fry the two eggs for 1-2 mins until cooked. Top the croque with the egg and serve with a smile!
