10 Minute Mac & Cheese

Mac and CheEse Clodagh Mckenna

Serves 2

INGREDIENTS:

200g / 1 cup macaroni pasta

25g / 2 tbsp butter

25g / 3 tbsp flour

400ml / 1 2/3 cup of milk

2 tsps Dijon mustard

150g / 1 1/2 cups of cheddar cheese

100g / 1 cup pancetta, cooked

sea salt and freshly ground black pepper

METHOD:

1. Pre-heat the oven to 180oC / 360F / Gas Mark 4.

2. Place a saucepan of water of a high heat, bring to the boil and stir in the macaroni pasta, and cook for 10 minutes. Then drain and set aside. Keep back a few tablespoons of the pasta cooking water, which you can stir into the macaroni, to keep it from clumping together.

3. While the pasta is cooking, melt the butter in a saucepan over a low heat, and then stir in the flour. Keep stirring for a couple of minutes, until the flour is cooked and it looks like pastry dough. Then whisk in the milk, and continue to whisk until you get athick and creamy sauce. Stir in theDijon mustard, crispy pancetta and grated cheddar cheese and season with sea salt and freshly ground black pepper.

4. Stir the sauce into the pasta, making sure all the pasta is coated in the cheese sauce. Then pour into a baking dish6. Bake in the pre-heated oven for 10 minutes
