10-MINUTE SCONES Clodagh McKenna

Makes 10 scones 

INGREDIENTS:

450g /3½ cups white plain/all-purpose flour 

2 tsp baking powder/soda

2 tsp sugar

pinch of sea salt

100g /½ cup butter, chilled and cubed 

300ml/1¼ cup milk 

METHOD: 

1. Pre-heat the oven to 200°C, 400°F, Gas Mark 6.

2. Sieve the flour and baking powder into a large bowl. The stir in the sugar and a pinch of salt. Rub the butter into the flour mixture using your fingertips until it resembles fine breadcrumbs. Gradually pour in a sufficient milk to make a soft dough. 

3. Roll out the dough on a floured surface to a thickness of 1cm (½ inch). Cut into circles with a pastry cutter or an upturned glass. Brush the scones with the remaining milk and a sprinkle of sugar. Place the circles on a floured baking tray. 

4. Bake in the pre-heated oven for 15 minutes. Once baked, leave to cool on a wire rack.
