Chocolate & Clementine Mousse

Serves 4 

INGREDIENTS: 

100g dark chocolate

75g caster sugar

2 eggs

250g mascarpone

zest of 3 clementines

METHOD

Place the dark chocolate in a heatproof bowl set over a saucepan of simmering water and allow to melt, then remove from the heat. Stir in the caster sugar and 2 eggs. Whisk together for a few minutes until the mixture is light and fluffy.

Gently whisk in the mascarpone and clementine zest for a few seconds, be careful not to over whisk otherwise it will become runny.

Divide the mousse between four cups or glasses and chill for 15 minutes, or until you need them.
