Classic Italian Tomato Sauce

Serves 6

INGREDIENTS:

2 tbsp extra virgin olive oil

2 onions, finely chopped
1

tsp dried red chili flakes

3 cloves garlic, crushed

2 x 400g tin of plum tomatoes 

1 tbsp tomato puree

Sea salt and freshly ground black pepper

OPTIONAL:
100g finely grated Parmesan or Pecorino

120g thinly sliced guanciale or pancetta

100g chorizo, diced

1 tbsp fresh basil, mint or rosemary

1 tsp dried oregano

METHOD:

1. Place a large saucepan or casserole dish over a medium heat, and pour in the olive oil. Stir in the onion, chili flakes and garlic, cook, stirring often, until soft, about three minutes.

2. Add the tinned tomatoes, and tomato puree. Season with sea salt and freshly ground black pepper. Reduce the heat to low, and cook, stirring occasionally, until sauce thickens, about 20 minutes.
