Jewelled Brussel Sprouts & Cabbage Slaw With Crunch Seeds

Serves 6

INGREDIENTS:

200g brussels sprouts 

½ small red cabbage 

100g cavolo nero 

2 clementines, segments roughly chopped

100ml crème fraiche 

100ml mayonnaise

1 tsp dried chili flakes 

1 tbsp flat parsley, finely chopped 

1 tbsp fresh mint, finely chopped

1 tbsp pumpkin seeds 

2 tbsp pomegranate seeds

Sea salt and freshly ground black pepper 

METHOD:

1. Thinly slice the brussel sprouts and red cabbage and combine in a large bowl. Cut the thick stems out of the cavolo nero, shred the leaves and add to the bowl.

2. Add the chopped clementine segments, chili flakes, chopped parsley and chopped mint and mix.

3. Add the crème fraiche and mayonnaise, mix well and season to taste.

4. Transfer to a serving bowl and scatter over the pomegranate seeds and pumpkin seeds.
