Orange Marmalade Cake

Makes 1 Cake
INGREDIENTS:
220g good quality thick cut orange marmalade, roughly chopped
180g unsalted butter, softened, plus ½ tablespoon for glaze, and more for greasing pan
150g caster sugar
Zest of 2 limes
Zest and juice of 1 orange
3 large eggs
190g plain flour
1½ tsp baking powder
Good pinch of sea salt
30g icing sugar
METHOD:
1. Pre-heat the oven to 180oC and grease a 2-pint loaf tin.
2. In the bowl of the Bosch Multi Use Machine, beat together the softened butter, sugar, lime zest and orange zest until light and fluffy, about 5 minutes. Add in the eggs, one by one, until incorporated. Next add half of the marmalade and the juice of the orange.
3. Slowly tip the flour, baking powder and salt into batter and beat together until combined.
4. Tip the batter into the prepared pan. Bake in the pre-heated oven until the surface of cake is golden brown and a toothpick inserted in the center emerges clean, 50 to 55 minutes. Remove from oven and transfer to a wire rack to cool for 10 minutes. Then turn the cake out of pan and place on the cooling rack, and allow to cool completely.
5. Heat the remaining marmalade in a small pot over a low heat until melted, whisk in the icing sugar and ½ tablespoon of butter until smooth, about 5 minutes. Drizzle the warm marmalade glaze over the top of the cake, allowing some to drizzle down the sides.
6. Cool completely before slicing.
