Orange & Raisin Bread

Makes 1 loaf

INGREDIENTS:

600g / 4 cups plain/all-purpose flour

2 tsp of bicarbonate of soda

1 teaspoon of salt

300ml / 1 1/3 cups milk

250ml / 1 cup natural yogurt

150g / 3/4 cup raisins or sultanas

zest and juice of 1 orange

For brushing

zest of 1 orange

METHOD:

1. Pre-heat your oven to 220°C, 425°F, Gas Mark 7.

2. Sieve the white flour and bicarbonate of soda and salt into a large mixing bowl and and stir. Then grate in the orange zest. Stir and make a well in the centre of the bowl.

3. Juice the orange in a bowl with the raisins or sultanas, and leave for a couple of minutes.

4. Whisk together the yogurt and milk and slowly pour into the well of dried ingredients. Use a fork to mix the flour and liquid together. Make sure that there are no dry patches and that the dough is completely wet. Then stir in the orange and dried fruits.

5. Pat your hands with flour and shape the dough into one round. Place on a floured baking tray. Flour a large knife and cut the shape of a cross into the top of the dough about two-thirds of the way through.

6. Mix together the zest of an orange with the leftover milk mixture and brush the round of bread with it.

7. Bake in the pre-heated oven about 10 minutes, then turn the temperature down to 180°C, 360°F, Gas Mark 4 for a further 15 minutes. To test whether the loaf is cooked, tap the back with your knuckles; it should sound hollow. Leave to cool on a cooling rack.
