Prawn Cocktail
Serves 4
INGREDIENTS:
1 tbsp olive oil
100g Dublin bay prawns
1 avocado, thinly sliced
½ cos lettuce
2 scallions, thinly sliced For the cocktail sauce
2 tbsp mayonnaise
2 tbsp tomato ketchup
1 tsp cayenne pepper
juice of ½ lemon
1 tbsp chopped fresh mint
sea salt and freshly ground black pepper
METHOD:
1. Place a pan over a high heat and add the olive oil. Then toss the prawns in the olive oil for 5 minutes, season with sea salt and freshly ground black pepper.
2. Shred the lettuce and mix together with the scallions. Make the sauce by mixing all of the ingredients together and seasoning with sea salt and freshly ground black pepper.
3. To serve, put the lettuce mixture into small bowlsor large martini glasses. Arrange the prawns on top, alongside place the sliced avocado and spoon the cocktail sauce over the prawns.
