One Chicken, One Weekend
About once a month I buy a really good quality organic chicken which I stretch throughout the whole weekend. Some of my favourite suppliers of organic chicken that you can buy online are: Daylesford Organic Farm, Pipers Farm and Eversfield Organic.
On Friday night I do a roast chicken basted in mustard tarragon butter with roasted sweet potatoes and butternut squash, served with creamed spinach. Get the recipe here and you can watch me make this here.
Then on Saturday Morning I remove all of the little bits of the white and brown meat from the leftover chicken carcass, all the little fatty bits I give to the doggies (lucky them) and I shred up the bits of chicken meat along with any leftover meat from the roast the night before and store it in the fridge.
I make a chicken stock from the carcass, you can get the recipe here. Then using the chicken stock as a base I make soup for lunch and risotto for supper (the key to both a really good soup and a really good risotto is a really good stock!) Then on Sunday night I make chicken soup using the leftover shredded chicken and any stock that’s left over. You can watch me make it here and get the recipe here.
