Chicken Fajitas
Serves 2
INGREDIENTS:
For the chicken
2 chicken breasts, thinly sliced
1 red pepper, thinly sliced
1 small red onion, peeled and thinly sliced
1 teaspoon smoked paprika
2 garlic cloves, crushed
1 teaspoon ground cumin
Pinch of chilli powder
Zest and juice of ½ a lime
1 tablespoon olive oil
Sea salt and freshly ground black pepper
For the Salsa
1 large tomato, chopped
½ small red onion, finely chopped
½ small red chilli, deseeded and finely chopped
2 tablespoons fresh coriander, chopped
Juice of 1 lime
To Serve
Flour tortillas (4 small, or 2 large)
125ml sour cream
50g cheddar cheese grated
1 ripe avocado, peeled and thinly sliced
1 lime cut into wedges
METHOD:
In a large bowl combine all the ingredients for the chicken, season well and toss until everything is well mixed and coated in spices. Set aside while you make you the salsa.
For the salsa place the chopped tomato, red onion and chilli in a bowl and season to taste. Add the coriander and lime juice and mix well.
Heat a griddle pan over a medium heat until hot. Place the chicken, peppers and onions on the griddle and cook for 6-8 minutes or until everything is nicely charred and the chicken is cooked through. Transfer to a warm serving bowl.
Briefly place the tortillas on the griddle pan to warm, then serve with the chicken and bowls of the toppings.
