One Pan Salmon With Chilli, Ginger & Honey

Serves 2

INGREDIENTS:

2 x salmon filets

2 tbsp soya sauce

2 tbsp olive oil

Juice and zest of one lemon

2-inch piece of fresh ginger, chopped

1 tbsp honey

Green vegetables, any of these – pak choi, broccoli, spinach, green beans, spring onions, asparagus

Sea salt and freshly ground black pepper

METHOD:

1. Place the soya sauce, olive oil, juice and zest of one lemon, fresh ginger, and honey into a small bowl and whisk together. Season with sea salt and freshly ground black pepper. Pour the marinade over the salmon.

2. Place a frying pan over a medium heat and add the marinated salmon, spooning any of the remaining marinade over the fish. Cook on each side for three minutes.

3. Chop up your green vegetables and tuck them in beside the fish. Continue to cook until the vegetables and salmon are cooked.

4. Serve with wholegrain rice, with fresh herbs folded through the rice.
