Red Cabbage Slaw

Serves 6

INGREDIENTS:

100ml Mayonnaise

Juice of 1 lemon

1 tbsp flat parsley, finely chopped

¼ red cabbage, peeled and cut into strips

1 stick of celery, thinly sliced

2 red apples, cored and cut into strips

1 carrot, peeled and grated

2 tsp dried cranberries

sea salt and freshly ground black pepper

METHOD:

Toss all the ingredients together in a large serving bowl, and season with sea salt and freshly ground black pepper.

Leave to marinate for an hour before serving.
