Pineapple Glazed Roast Ham
Serves 10
INGREDIENTS:
1 whole ham (about 4.5kg), bone in
30 whole cloves
220g can of pineapple rings
125g dark soft brown sugar
METHOD:
1. Pre-heat the oven to 180°C/Gas 4.
2. Prepare the ham by trimming away any excess fat, leaving about a 5mm(¼ inch) layer all over. Place the ham, cut side down, in an ovenproof baking dish, cover with foil and bake for 2½ hours.
3. Remove the ham from the oven and increase the oven temperature to 200°C/Gas 6. Discard the foil and using a sharp knife, score a 2.5cm (1 inch) wide diamond pattern over the entire ham.
4. Drain the pineapple from the can, reserving the juice. Mix together the brown sugar and reserved pineapple juice and pour over ham. Arrange the pineapple slices on top of the ham, securing them with the whole cloves.
5. Return the ham to the oven, and bake uncovered for 30 minutes.
6. The ham will keep for a week in the fridge.
