Pineapple Glazed Roast Ham
Serves 6
INGREDIENTS:
2kg ham
16 whole cloves
220g can of pineapple rings
125g dark soft brown sugar
Jar of stemmed cherries
METHOD:
Pre-heat the oven to 180°C fan.
Prepare the ham by trimming away any excess fat, leaving about a 5mm (¼ inch) layer all over. Place the ham, cut side down in a roasting tray and pour in 100ml of water. This will help keep the ham moist. Cover with foil and bake for 1½ hour.
Remove the ham from the oven and increase the oven temperature to 200°C fan. Discard the foil and using a sharp knife, score 1 inch wide diamond pattern over the entire fat of the ham.
Drain the pineapple from the can, reserving the juice. Mix together the brown sugar and reserved pineapple juice and pour over ham. Arrange the pineapple slices on top of the ham, secure with toothpicks. Stud the pineapple slices with the whole cloves.
Return the ham to the oven, and bake uncovered for 30 minutes. Half way through the cooking time, baste using a large spoon.
The ham will keep for a week in the fridge. Garnish with stemmed cherries for that retro look!
