Rocket Pesto
INGREDIENTS:
30g almond nuts, whole
60g rocket
1 garlic clove, crushed
30g parmesan, grated
Zest and juice of 1 lemon
150ml extra-virgin olive oil
Sea salt and freshly ground black pepper
METHOD:
Add all the pesto ingredients in a food processor and pulse until well combined, but not totally smooth. Season to taste.
