SPINACH, RICOTTA AND HONEY PIZZA PIE

Serves 2

INGREDIENTS:

1 sheet Puff Pastry, thawed 

Olive oil

200g spinach

120g ricotta cheese 

1 tsp fresh thyme, chopped

50g Parmesan cheese

2 tsp honey

Sea salt and freshly ground black pepper

METHOD:

1. Pre-heat the oven to 200oC.

2. Roll out the puff pastry on a lightly floured surface to a large rectangle shape and place on baking tray.

3. Drizzle olive oil over the pastry and place the spinach out evenly on top, it looks like a lot but the spinach with wilt.

4. Using a teaspoon, add spoons of ricotta on top of the spinach, and a sprinkle of the fresh thyme and parmesan cheese.

5. Season with sea salt and freshly ground black pepper.  Bake for 8-10 minutes in the pre-heated oven or cheese is melted and crust is golden brown. Finish with a drizzle of honey.
