Rainbow Skin Brightening Salad
This skin brightening salad is packed with Vitamin C, which is well known for it's skin brightening, antioxidants and anti-inflammatory properties. The other great reason for making this salad is that it tastes delicious, it's easy to make and it contains cannellini beans which will give you slow releasing energy throughout the day.
Serves 4
INGREDIENTS:
1 apple, quartered, cored and grated
2 beetroot, cooked, peeled and grated
1 carrot, peeled and cut into ribbons using a vegetable peeper
½ cucumber, cut into ribbons using a vegetable peeper
2 celery stalk, thinly sliced
4 radishes, thinly sliced (optional)
400g tin of canned cannellini beans, drained and rinsed
80g green leaves, any of these – salad, spinach, kale, or chard
2 tbsp, of whatever fresh herbs you have, chopped
For the dressing
zest and juice of 1 lemon or 2 limes
1 teaspoon of honey
1 teaspoon Dijon mustard
30ml extra virgin olive oil
METHOD:
1. Place all the ingredients for the dressing into a large mixing bowl, and whisk together.
2. Next add all the ingredients for the salad into the bowl. Toss and serve!
3. There are so many delicious additions you can add to the salad – I added one roasted filet of chicken in the recipe video, but have a look below for some more alternatives.

Grilled spiced chicken – rub the raw chicken with harissa pasta and grill per usual.

Grilled haloumi
Crumbled feta cheese
Pumpkin, sunflower or sesame seeds
