Butter Chicken Curry

If I go out for an Indian meal, this is the curry that I order – the creamy, perfectly spiced sauce is so addictive. I also love making this dish with big, juicy prawns. Make sure you add lots of lime juice and a good twist of black pepper at the end. It freezes well, so double the recipe and freeze half for a rainy day.

Lamb Chops with Crushed Peas, Mint Jus & Pan-fried Potatoes

I just love a juicy lamb chop! My recipe is a classic, as that’s how I like them best. I always have frozen peas in the freezer and a few potatoes lying around, so it makes this whole dish very easy. If you want to jazz it up a bit, you can add crushed fennel to the lamb chops, or cream up your frozen peas by whizzing them with crème fraîche, lime and coriander. A couple of tips for the lamb chops to keep them juicy – remove them from the fridge 30 minutes before cooking and be careful not to overcook them. They should still be pink on the inside.

Ricotta Meatballs with Polenta

This is the traditional way that they make meatballs in Sicily. I mix together minced pork and ricotta with the ground beef. The pork brings flavour and juiciness and the ricotta brings a lovely lightness. I serve them with polenta as they do during the colder months in Italy, but you could use spaghetti. This is a great freezer recipe, so make double and you can store it away. It’s nice to serve a green vegetable alongside to lighten the dish; I use cavolo nero but you could choose purple sprouting broccoli, shredded cabbage or a green salad.

Biting into a cheesy crumb with a gorgeous crispy texture, then into juicy meat oozing in melting herb garlic butter, is so delicious and nothing like the frozen Eighties version that chicken Kiev has become associated with.
