These falafels are so good dipped in the spicy harissa yogurt. You can also try wrapping them in a warmed wholemeal pitta. Harissa is one of my storecupboard staples, and I would urge you to get a few jars – it has a slow-burning chilli heat, balanced with a sweet smokiness that adds a real depth of flavour to any dish. You can dollop harissa on eggs or avocado toast, use it to marinade vegetables, or add it to couscous or grilled halloumi.

Spanish Fish Stew

This recipe is bursting with fresh Spanish flavours – sweet tomatoes, earthy olives, nutty almonds and fragrant saffron infusing the fish. It takes about 20 minutes to prepare and only 30 minutes to cook in the oven. If you don’t have saffron, you can use 2 teaspoons of smoked paprika or chilli flakes. I like to serve this dish with herbed rice to add freshness to the aromatic flavours of the stew. Use whatever fresh herbs you have, chop them up finely and mix them through cooked rice.
