My Family Plum Pudding

For as long as I can remember, every November my mum would make a plum pudding, long enough before Christmas to allow the flavors to strengthen (though you can start it a week before Christmas and still have outstanding results). The Christmas smells would waft through the house, and myself and my brother Jim would start a chorus of carols. Happy plum pudding memories.

Irish Cream Liquor & Soda Bread Ice Cream

In any Irish kitchen there is always a stale piece of soda bread left over in the bread bin, which is a great excuse to make soda bread ice cream. Roasting the bread crumbs with the brown sugar creates little crunch speckles throughout. The Irish cream Liquor adds another depth of coffee and caramel flavour and a silky texture. You can leave this out if you prefer, but it really is delicious.

Fish & Chips with Tartare Sauce

Who doesn’t love fish and chips! Growing up in Ireland it was always the treat on a Friday night, served in newspaper, eating it on the pier. I don’t live by the sea now and so it’s become something that I do at home when I miss my other home, Ireland. The batter is light and crisp (make sure theoil is very hot), chips are crunchy and floury on the inside (I like a maris piper) and a homemade tartare sauce that you can make in under 5 minutes.
